Grilled Manhattan Clam Chowder

Take your next fish dish to the East Coast. Fresh clams are stirred into a rich, old bay tomato sauce and kissed with pecan smoke for a chowder you and your crowd will be lining up for.

Ingredients

  • 2 tbsp chopped garlic
  • 1 large sweet onion, chopped
  • 3 stalks celery cut into 1/4" inch pieces
  • 3 carrots cut into 1/4" inch pieces
  • 1 green bell pepper, chopped
  • 2 sprigs rosemary
  • 1 (8 oz) bottle clam juice
  • 1 (28 oz) can diced tomatoes
  • 2 cups Yukon Gold potatoes, cubed to 1/4" inch cubes
  • 2 tbsp old bay seasoning
  • kosher salt
  • black pepper
  • 1 dozen hard shelled clams, scrubbed well

Preparation

Place garlic, onion, celery, carrots, bell peppers, and herbs in a large cast iron pot and place on a stovetop over medium heat. Cook until the onions are translucent and vegetables are tender, stirring occasionally. Add the clam juice, tomatoes, and potatoes to the pot.

Meanwhile, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 375 degrees F and preheat, lid closed, for 10 to 15 minutes.

Place the pot in the grill and cook for 30 minutes. Stir the chowder and add the old bay seasoning and salt and pepper to taste. Cook for another 20 minutes and add the clams.

Cover with a tight fitting lid and cook for an additional 15 minutes making sure to discard any clams that haven’t opened.

Remove chowder from the grill and serve. Enjoy!
