Smoked Tuna Belly Tacosby Journey South

Transform your fresh catch into cool & crunchy tacos. Smoked tuna belly is wrapped in a tortilla and topped with a ginger-honey coleslaw for one tasty deep-sea bite.

Ingredients

  • 1 Tbsp honey
  • 1/8 tsp crushed red pepper flakes
  • 1/2 tsp salt
  • 1/4 tsp fresh ground black pepper
  • 1/4 tsp fish sauce
  • 1 fresh pineapple, cored, peeled and thinly sliced
  • 1 head cabbage, shredded
  • 2 large carrots, grated
  • 12 (4-inch) flour tortillas
  • 3 tbsp cilantro, chopped
  • 3 lbs ahi tuna belly
  • 3 tbsp olive oil
  • 1/4 cup Leinenkugel's Summer Shandy Rub
  • 1 1/2-inch piece ginger, grated
  • 3 tbsp seasoned rice vinegar
  • 1 Tbsp honey
  • 1/8 tsp crushed red pepper flakes
  • 1/2 tsp salt
  • 1/4 tsp fresh ground black pepper
  • 1/4 tsp fish sauce
  • 1 fresh pineapple, cored, peeled and thinly sliced
  • 1 head cabbage, shredded
  • 2 large carrots, grated
  • 12 (4-inch) flour tortillas
  • 3 tbsp cilantro, chopped

Preparation

When ready to cook, start the Traeger according to grill instructions. Set the temperature to 450 degrees F (set to 500 degrees F if using a WiFIRE-enabled grill) and preheat, lid closed, for 10 to 15 minutes.

Brush the tuna with a light layer of olive oil then coat with a layer of Leinenkugel's Summer Shandy Rub.

Let tuna sit for 10 minutes while coleslaw is prepared.

For the Coleslaw: Whisk together ginger, vinegar, honey, red pepper flakes, salt, pepper and fish sauce.

In a large bowl, toss together the pineapple, cabbage and carrots. Combine thoroughly with dressing.

Place the fish on the grill and cook for three minutes on each side. Remove the fish from the grill and let it rest for 5 minutes before thinly slicing.

Assemble the tacos with the fish and coleslaw and top with chopped cilantro. Enjoy!
