Smoked Salmon Candy

Meat candy ahead: Salmon fillet cured with salt and brown sugar, then smoked and mopped with maple syrup.

Ingredients

  • 3 lbs. Salmon
  • 2 cups Gin
  • 1 cup Dark Brown Sugar
  • 1/2 cup Kosher Salt
  • 1 cup Maple Syrup
  • 1 Tbsp. Black Pepper
  • 3 lbs. Salmon
  • 2 cups Gin
  • 1 cup Dark Brown Sugar
  • 1/2 cup Kosher Salt
  • 1 cup Maple Syrup
  • 1 Tbsp. Black Pepper

Preparation

In a large bowl, combine all ingredients for the cure. Cut the salmon into 2 oz pieces and place in the cure. Cover and refrigerate overnight.

When ready to cook, start the Traeger according to grill instructions. Set the grill temperature to Smoke and pre-heat, lid closed for 5 minutes.

Spray foil with vegetable oil. Place salmon on foil and sprinkle with additional brown sugar.

Place foil directly on the grill grate. Close the lid and smoke the salmon for 3-4 hours or until fully cooked.

Serve hot or chilled. Enjoy!
