Grilled Korean Short Ribs

A homemade Korean marinade and applewood smoke take this wood-fired twist on beef short ribs to the top. These marinated short ribs are sure to be wood-fired showstoppers.

Ingredients

  • 5 lbs KOREAN SHORT RIBS
  • 1/2 cup SOY SAUCE
  • 1 cup BROWN SUGAR
  • 1/2 cup RICE WINE
  • 1 tbsp SESAME OIL
  • 2 CLOVES GARLIC
  • 1 (1-inch) piece GINGER, PEELED
  • 1 ASIAN PEAR, PEELED AND QUARTERED
  • 1 RED THAI CHILI, DESEEDED AND chopped
  • Sesame Seeds, for garnish
  • Scallions, sliced for garnish

  • 1/2 cup SOY SAUCE
  • 1 cup BROWN SUGAR
  • 1/2 cup RICE WINE
  • 1 tbsp SESAME OIL
  • 2 CLOVES GARLIC
  • 1 (1-inch) piece GINGER, PEELED
  • 1 ASIAN PEAR, PEELED AND QUARTERED

Preparation

To make the marinade, combine all ingredients except for the ribs in the pitcher of a blender and puree until smooth. Pour over short ribs, cover and marinate in the fridge over night.

When ready to cook, start the Traeger according to grill instructions. Set the temperature to 450 degrees F (set to 500 degrees F if using a WiFIRE-enabled grill) and preheat, lid closed 10 to 15 minutes.

Remove ribs from marinade and discard marinade. Place the ribs directly on the grill grate and cook 3-5 minutes per side.

Remove from grill and sprinkle with thinly sliced scallions or sesame seeds. Enjoy!
