Baked Queso Blanco Dip

Melty, cheesy goodness on a chip. Dig into this warm and creamy dip loaded with 2 kinds of cheese, green chilies, and spices for an appetizer you won’t be able to get enough of.

Ingredients

  • 1 lb AMERICAN CHEESE, CHOPPED INTO SMALL PIECES
  • 1/2 lb MOZZARELLA CHEESE, GRATED
  • 12 oz HEAVY CREAM
  • 2 cans CHOPPED GREEN CHILES
  • CILANTRO, CHOPPED
  • CHERRY TOMATOES, HALVED
  • NACHO Jalapeños
  • TORTILLA CHIPS
  • 1 lb AMERICAN CHEESE, CHOPPED INTO SMALL PIECES
  • 1/2 lb MOZZARELLA CHEESE, GRATED
  • 12 oz HEAVY CREAM
  • 2 cans CHOPPED GREEN CHILES
  • 1 tsp CHILI POWDER
  • 1 TBSP CUMIN
  • 1/2 tsp RED PEPPER FLAKES
  • 1 TBSP Traeger CHICKEN RUB
  • CILANTRO, CHOPPED
  • CHERRY TOMATOES, HALVED
  • NACHO Jalapeños
  • TORTILLA CHIPS

Preparation

When ready to cook, start the Traeger according to grill instructions. Set the temperature to 450 degrees F (500 if using a WiFIRE-enabled grill) and preheat, lid closed, for 10 to 15 minutes.

Bring cream to a simmer over medium heat. Slowly whisk in cheese in batches making sure the first batch is fully incorporated before adding the next.

Once all the cheese is melted, add in green chiles and seasonings. Taste and adjust seasoning with more Traeger Chicken Rub if needed.

Pour cheese mixture into a cast iron pan and place directly on the grill grate. Cook for 15-20 minutes or until cheese mixture is bubbling.

Garnish with tomatoes, cilantro, jalapeños and a sprinkle of chili powder if desired. Serve with your favorite tortilla chips. Enjoy!
