Smoked Cherry Bourbon

Everything's better with a little smoke and bourbon. Juicy, smoked cherries are simmered into a sugary bourbon reduction and folded into a creamy homemade vanilla ice cream. Don't miss out on this punch of flavor.

Ingredients

Ice Cream:

  • 1 cup MILK
  • 1 cup HEAVY CREAM
  • 1 VANILLA BEAN, SPLIT LENGTHLISE
  • 6 EGG YOLKS
  • 1/2 cup SUGAR
  • PINCH OF SALT

SMOKED BOURBON CHERRIES:

  • 1 lb CHERRIES, PITTED
  • 2 Tbsp SUGAR
  • 1 Tbsp WATER
  • 3 Tbsp BOURBON

Ice Cream:

  • 1 cup MILK
  • 1 cup HEAVY CREAM
  • 1 VANILLA BEAN, SPLIT LENGTHLISE
  • 6 EGG YOLKS
  • 1/2 cup SUGAR
  • PINCH OF SALT

SMOKED BOURBON CHERRIES:

  • 1 lb CHERRIES, PITTED
  • 2 Tbsp SUGAR
  • 1 Tbsp WATER
  • 3 Tbsp BOURBON

Preparation

When ready to cook, start your Traeger according to grill instructions. Set the temperature to 180 degrees F (set to Super Smoke if using a WiFIRE-enabled grill) and preheat, lid closed (10-15 minutes).

Lay cherries out on a sheet tray and place directly on the grill grate. Smoke the cherries for 30 minutes. Remove from the grill and set aside.

Place cherries, water and sugar in a medium sauce pan and bring to a simmer over medium heat. Cook 10 minutes until liquid has reduced and is syrupy. Remove from heat, stir in bourbon and set aside.

Place milk, cream, sugar, salt, egg yolks in a medium sauce pan and bring to a simmer whisking constantly. Cook until sauce is thick enough to coat the back of a spoon.

Remove from heat and strain into a heat proof bowl placed over an ice bath. Cool completely.

Place ice cream base in your ice cream maker and churn according to manufacturers instructions.

Remove from ice cream machine and fold in cherry mixture before transferring to the freezer. Let chill at least 2 hours before stirring.

Serve with extra bourbon cherries and sauce if desired. Enjoy!
